Vegan Taco Bean Salad

Still drooling over the tacos I made few weeks ago, I thought I'd prepare a lighter version by making it into a salad bowl, and then adding some corn into the salsa as corn is just so delicious and what's Mexican food without some corn! I found some chilli lime tortilla chips in the grocery store, or you can use plain corn ones as well, or omit them altogether and just enjoy the fillings and sides.


Vegan Taco Bean Salad


Salad/Taco
9 romaine lettuce leaves
small bag of corn/tortilla chips
(I got lime & chilli ones)


Bean Filling
1 can refried beans
1/2 large red onion
1/2 red capsicum
2 tsp olive oil
1/2 tsp minced garlic
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp cayenne pepper


Guacamole
2 large avocado
1 bunch coriander
juice of 1 lime
1/2 large red onion
1/4 tsp Himalayan pink salt

Tomato Corn Salsa
2 large tomatoes
1/2 large red onion
1 cup corn kernels
1/2 red capsicum
2 TBS tomato paste
1 TBS apple cider vinegar
1 tsp minced garlic
juice of 1 lime
1 red/green chilli
1 bunch coriander
pinch of salt, pepper, cumin



Cashew Sour Cream
1 cup cashews (soaked 6hrs)
1/2 cup water
1 TBS nutritional yeast
2 tsp lemon juice
2 tsp apple cider vinegar
1/4 tsp Himalayan pink salt
1/2 tsp onion powder

Bean Filling
1. Dice the onion into small pieces

2. Heat oil on skillet, add all the spices and garlic with the onions and cook for a few mins until they soften

3. Dice the capsicum into small pieces and add into the onions, stir for another 2-3 mins

4. Add in the refried beans and stir for another 2-3 mins until it's all thoroughly mixed together and the onions and capsicum are soft and cooked

5. Put into a serving bowl to let cool down

Tomato Salsa
6. Chop the tomato into small chunk, dice the onion, capsicum, chilli and coriander into small pieces and combine in a large bowl with the rest of the ingredients, set aside

Guacamole
7. Mash up the avocados in a bowl

8. Dice the onion, chop the coriander and chilli and combine with the rest of the ingredients with the avocado, mix thoroughly

Cashew Sour Cream
9. Combine all the ingredients together and blend on high until it's a smooth consistency, add more water if you want a slightly thinner 'cream'

Assemble Salad
10. Chop the romaine lettuce into big pieces and full the bottom of a salad bowl. Then you can either layer or scoop a strip each of the bean, salsa and guacamole on top. Add a dollop of sour cream, grab a handful of tortilla chips and away you go! This will serve 3 decent size salads so enjoy!

    I'm Binny, a full time Bikram Yoga teacher and studio owner that lives in Perth, Australia.

    I started this blog to share the things I love the best in the world: being healthy and happy, food (especially raw), yoga, traveling and most importantly, learning how to love and be true to myself.

    I suffered from severe digestive problems when I was younger, being gluten and lactose intolerant, and developed compartment syndrome and fibromyalgia in my teens. I have lived with constant pain for over 16 years now.

    Over the past 10 years, I've shifted to a mainly plant based diet and realised that being well and healthy is a way of life. I have been teaching Bikram yoga since 2011, in the US and Australia. Due to my health issues I've also had a lot of bodywork done as well as explored alternative therapies.

    I've become much more aware of myself as a result of all this - physically, mentally, spiritually and emotionally. Right now I love my life. In my career I love what I do and I do what I love. I have traveled to some amazing places around the world and made lifelong friends. In between working and traveling, I cook up a storm in the kitchen, especially raw  desserts, spend time with the people I love the best, which now includes a yoga husband, a mini yogini Estell, and our dog! I try to listen to my body the best I can.

    I truly believe that we all have the power and the capabilities to heal our own bodies, to nourish the spirit and seek our own happiness and life's purpose. This my journey...
