Raw Pad Thai
1/2 zucchini
1/2 carrot
1/8 purple cabbage
handful of sprouts (for this one I used alfafa and radish)
1/2 bunch of coriander (cilantro)
1 TBS chopped peanuts
Sauce
2 TBS Tahini
2 TBS nut butter (peanut or almond or a mix)
1 TBS lemon juice
1 TBS tamari
1TBS maple syrup
1/2 tsp garlic
1/2 tsp ginger
1 chilli
2. Mix all the sauce ingredients together
3. Combine the sauce and the 'noodles' together and mix thoroughly, leave in the fridge for a few hours or overnight
* I love this sauce and like it quite thick so I was very generous with the spoonfuls. The more nut butter, the thicker the concoction
