Raw Creamy Kale Avocado Salad

I have an abundance of kale in my garden,  in fact, I don't have kale plants anymore, I have small kale 'trees' shaped like a palm with big leaves sprouting from the top.

This means kale is a part of my daily diet, from salads, to juices and smoothies, even my dog eats steamed kale.

This is one of the easiest and simplest salads you can make. All you have to do is combine everything together. The longest part is massaging the kale!

A lot of people find kale hard to chew and a little bitter so the trick to combat that is lemon/lime juice or apple cider vinegar. The acid helps to break down the toughness of the kale and spending a few minutes massaging it in softens and slightly wilts the kale as well as taking the edge off the bitterness.



Kale in the last few years has gained popularity as a superfood, being one of the healthiest vegetables available. It's high in fiber, iron, Vitamin K, A & C, low in calories and has zero fat. Per calorie it has more iron than beef and more calcium than milk. It's a good source of potassium, manganese, phosphorus and copper.  This combined with the powerhouse super fruit avocado guarantees a nutrient dense filling salad.

Avocados are a good source of fat, protein and fiber. The monounsaturated fat and polyunsaturated fat it contains is a good fat for the body, helping to lower bad cholesterol and promote heart health and cardiovascular health. They contains high levels of vitamins such as B, C, D, K as well as potassium, offering a wide range of anti-inflammatory benefits. Once you make up the salad you can always add extra toppings such as nuts, seeds, dried fruits or other veggies or keep it simple and just enjoy!



Raw Creamy Kale Avocado Salad


5 -6 large stems kale
1 med ripe avocado
1/4 cup coriander (cilantro)
1 lime
3 TBS hemp seeds
1 TBS wholegrain mustard

1 tsp apple cider vinegar
1 tsp lemon juice

Topping
dried mulberries
cranberries
sunflower seeds



1. Wash and de-stem kale, tear into small pieces

2. Juice the lime into the kale, add chopped coriander and massage for a few mins to soften the kale

3. In a separate bowl combine avocado, hemp seeds, mustard, ACV, lemon juice and mash together

4. Combine the avocado dressing with the kale

5. Add any other topping you like, I normally add mulberries or cranberries to give it a little bit of a sweet flavour, or leave as it is and enjoy!

    I'm Binny, a full time Bikram Yoga teacher and studio owner that lives in Perth, Australia.

    I started this blog to share the things I love the best in the world: being healthy and happy, food (especially raw), yoga, traveling and most importantly, learning how to love and be true to myself.

    I suffered from severe digestive problems when I was younger, being gluten and lactose intolerant, and developed compartment syndrome and fibromyalgia in my teens. I have lived with constant pain for over 16 years now.

    Over the past 10 years, I've shifted to a mainly plant based diet and realised that being well and healthy is a way of life. I have been teaching Bikram yoga since 2011, in the US and Australia. Due to my health issues I've also had a lot of bodywork done as well as explored alternative therapies.

    I've become much more aware of myself as a result of all this - physically, mentally, spiritually and emotionally. Right now I love my life. In my career I love what I do and I do what I love. I have traveled to some amazing places around the world and made lifelong friends. In between working and traveling, I cook up a storm in the kitchen, especially raw  desserts, spend time with the people I love the best, which now includes a yoga husband, a mini yogini Estell, and our dog! I try to listen to my body the best I can.

    I truly believe that we all have the power and the capabilities to heal our own bodies, to nourish the spirit and seek our own happiness and life's purpose. This my journey...
