Green Summer Salad Raw Ingredients 3 stems curly kale 2 handfuls spinach 1/2 can of corn 2 stalks celery 1/2 large cucumber 2 tsp lemon juice 1 tsp maple syrup 1/4 tsp fennel powder 1 TBS apple cider vinegar 1 TBS sesame seeds handful cranberries Cooked Ingredients 4 button mushrooms 1 spring onion 1 shallot 1 TBS apple cider vinegar 1 TBS lemon juice 2 TBS coconut oil 1 tsp garlic 1 tsp caraway seeds 1/4 tsp ginger several cracks of pepper |
1. De-stalk kale, chop finely and rub with lemon juice, maple syrup and fennel powder until it softens
2. Dice celery and cucumber into small pieces and combine with other raw ingredients in a large salad bowl
3. Slice mushroom, finely chop spring onion and shallot and combine with other ingredients
4. Saute for 5 mins on med-low heat
5. Add to raw ingredients, mix well and add garnishes
