Dark & Decadent Raw Walnut Brownies

Last week I went through a brownie phase and ended up having one every day for an entire week, and since I had just gotten back from holidays I was too lazy to make them so I went to several difference places and sampled theirs. One thing I found was if I take a couple of bites it's great, but if I were to eat a whole one, it was way too sweet, so tonight I thought I'd make some that wasn't as sweet, but just as rich and yummy. These took 10 mins to make and tastes great!

Make sure you soak your nuts beforehand, deactivated nuts are much easier to digest and especially with walnuts you'll notice the bitter aftertaste disappear after it's been soaked. It makes a huge difference in the taste. Walnuts can boost your health in a number of ways, eating just one ounce or roughly 7 per day is all it takes to receive all their beneficial properties. They contain cancer fighting properties as well as benefit heart health. They contain the plant based omega 3 fat ALA which is anti inflammatory and supports healthy cholesterol levels. Added to that some unique and powerful antioxidants that are crucial to your health, and studies have shown that walnuts had the best efficacy amongst the nuts tested.

These turned out with a sticky chewy consistency with the flavour of dark chocolate. If you have more of a sweet tooth then add in another 1/2 cup of almonds as well as 1/8 cup more of maple syrup to the brownie mixture with a couple more dates. That's one of my favourite things about preparing raw food, everything is altered to taste and super easy to substitute or change around. These actually keep better in the freezer, they're the perfect sticky consistency, no thaw time either, just take it out, cut it up and eat away!


Dark & Decadent Raw Walnut Brownie



1 1/2 cup walnuts
1/2 cup almonds
7 large medijool dates
1/2 cup cacao
1/4 cup maple syrup
1 tsp vanilla essence
1/8 tsp Himalayan sea salt

Icing
1/2 cup cacao powder
1/4 cup almond milk
1/4 cup maple syrup
3 TBS coconut oil



1. Soak the walnuts and almonds overnight, put out to dry

2. Put aside 1/2 cup walnut and chop into large pieces

3. Put the rest of the brownie ingredients into a food processor and blend on med until thoroughly mixed. If you use the high setting it will make it very smooth, whereas I prefer a slightly crunchy texture

4. Add in the chopped walnuts and fold until it's mixed through

5. Line up a rectangle or square tin with baking paper and press the mixture into it, press down firmly with a spoon

6. Blend all the icing ingredients together and pour on top of the brownie mixture. Make sure the coconut oil is warmed up so it's a liquid consistency

7. Put into the freezer for a couple of hours, then cut and serve!

    I'm Binny, a full time Bikram Yoga teacher and studio owner that lives in Perth, Australia.

    I started this blog to share the things I love the best in the world: being healthy and happy, food (especially raw), yoga, traveling and most importantly, learning how to love and be true to myself.

    I suffered from severe digestive problems when I was younger, being gluten and lactose intolerant, and developed compartment syndrome and fibromyalgia in my teens. I have lived with constant pain for over 16 years now.

    Over the past 10 years, I've shifted to a mainly plant based diet and realised that being well and healthy is a way of life. I have been teaching Bikram yoga since 2011, in the US and Australia. Due to my health issues I've also had a lot of bodywork done as well as explored alternative therapies.

    I've become much more aware of myself as a result of all this - physically, mentally, spiritually and emotionally. Right now I love my life. In my career I love what I do and I do what I love. I have traveled to some amazing places around the world and made lifelong friends. In between working and traveling, I cook up a storm in the kitchen, especially raw  desserts, spend time with the people I love the best, which now includes a yoga husband, a mini yogini Estell, and our dog! I try to listen to my body the best I can.

    I truly believe that we all have the power and the capabilities to heal our own bodies, to nourish the spirit and seek our own happiness and life's purpose. This my journey...
