Raw Dark Chocolate Brownies
1/2 cup cashews (soaked for 6hrs)
1/2 cup macadamias (soaked for 6hrs)
2 TBS cacao powder
1 TBS coconut nectar (can use maple syrup)
1 TBS coconut oil
1 tsp vanilla essence
pinch of celtic sea salt
2. Once all blended form little squares, the above ingredients will make roughly 6 brownie bites
3. Put them in the fridge for a couple of hours, then top with cacao/coconut/cinnamon etc
* I used my thermomix, speed 8, 10 secs x 3

The cashew and macadamia mix ensures that it's not overly sweet, yet it has a creamy melt in your mouth texture that is to die for. You can always add more or less syrup depending on your preference, the same goes for the cacao powder.
Cashews and macadamias are both high in unsaturated fatty acids, which helps to promote good cardiovascular health. They also have high levels of antioxidants and vitamins. That been said, it is quite dense, so too good is also no good! This month I have been a bit too nut crazy and my system is feeling it, so next month I'm aiming for a nut recipe or treat every 3 days or so, let's see if I can stick with it.
