Crispy Cauliflower Tortilla with Avocado Dressing

This meal was surprisingly filling and kept us full the whole night, who knew a simple vegetable like cauliflower combined with protein rich flour would do the trick! I used a combination of chickpea and almond as they both contain protein and are quite mild so it the spices in the mix can come through. If you want more of a protein hit use almond milk instead of soy for the batter.

Cauliflower is a cruciferous vegetable that packs a wallop of health benefits as well as being a great substitution for heavier veggies such as potato. My husband loves cauliflower and since it's his birthday he gets all his favourite requests for a few days. This nutrition packed flowering vegetable is a great source of Vitamin C, and manganese, both of which are powerful antioxidants. It also contains carotenoids, reducing the risks of cardiovascular diseases and cancer. It contains detoxifying properties, helping to support the liver's abilities to neutralize toxins, and is a great digestive support, being rich in dietary fiber while helping to lower cholesterol levels.

I used red capsicum as a garnish but feel free to add any extras, salsa, pesto, even hummus, it's all about creating something you want to eat with the flavours you like. As long as you have the main base, feel free to experiment. 


​Crispy Cauliflower Tortilla with Avocado Dressing



1/2 head of cauliflower
1 cup almond meal 
1 tsp cayenne pepper
1 tsp paprika

1/2 tsp smoked paprika
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/4 tsp Himalayan pink salt

1 cup soy milk
1/2 cup chickpea flour
juice of 1 lime 
1 TBS apple cider vinegar

Avocado Coriander Dressing
2 large avocado
1/2 cup chopped coriander
juice of 1 lime
3 TBS water
1/2 tsp minced garlic
pinch of Himalayan pink salt

1. Preheat oven to 180ºC

2. In a bowl mix the spices and almond meal together

3. In another bowl combine the chickpea flour, soy milk, vinegar and lime juice. This is your batter so make sure it's mixed well

4. Line a baking tray with parchment paper 

​5. Break the cauliflower into florets. 
Coat the florets in batter, cover well then toss in dry almond mix

6. Bake for 25 - 30 minutes

​7. In a large bowl combine all the ingredients for the avocado dressing. Mash well with a fork, add more water or lime juice depending on how running you want the dressing


8. Once the cauliflower is done, grab some lettuce leaves or tortillas and make your yummy wrap!

    I'm Binny, a full time Bikram Yoga teacher and studio owner that lives in Perth, Australia.

    I started this blog to share the things I love the best in the world: being healthy and happy, food (especially raw), yoga, traveling and most importantly, learning how to love and be true to myself.

    I suffered from severe digestive problems when I was younger, being gluten and lactose intolerant, and developed compartment syndrome and fibromyalgia in my teens. I have lived with constant pain for over 16 years now.

    Over the past 10 years, I've shifted to a mainly plant based diet and realised that being well and healthy is a way of life. I have been teaching Bikram yoga since 2011, in the US and Australia. Due to my health issues I've also had a lot of bodywork done as well as explored alternative therapies.

    I've become much more aware of myself as a result of all this - physically, mentally, spiritually and emotionally. Right now I love my life. In my career I love what I do and I do what I love. I have traveled to some amazing places around the world and made lifelong friends. In between working and traveling, I cook up a storm in the kitchen, especially raw  desserts, spend time with the people I love the best, which now includes a yoga husband, a mini yogini Estell, and our dog! I try to listen to my body the best I can.

    I truly believe that we all have the power and the capabilities to heal our own bodies, to nourish the spirit and seek our own happiness and life's purpose. This my journey...
