I used red capsicum as a garnish but feel free to add any extras, salsa, pesto, even hummus, it's all about creating something you want to eat with the flavours you like. As long as you have the main base, feel free to experiment.
Crispy Cauliflower Tortilla with Avocado Dressing
1/2 head of cauliflower
1 cup almond meal
1 tsp cayenne pepper
1 tsp paprika
1/2 tsp smoked paprika
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/4 tsp Himalayan pink salt
1 cup soy milk
1/2 cup chickpea flour
juice of 1 lime
1 TBS apple cider vinegar
Avocado Coriander Dressing
2 large avocado
1/2 cup chopped coriander
juice of 1 lime
3 TBS water
1/2 tsp minced garlic
pinch of Himalayan pink salt
2. In a bowl mix the spices and almond meal together
3. In another bowl combine the chickpea flour, soy milk, vinegar and lime juice. This is your batter so make sure it's mixed well
4. Line a baking tray with parchment paper
5. Break the cauliflower into florets. Coat the florets in batter, cover well then toss in dry almond mix
6. Bake for 25 - 30 minutes
7. In a large bowl combine all the ingredients for the avocado dressing. Mash well with a fork, add more water or lime juice depending on how running you want the dressing
8. Once the cauliflower is done, grab some lettuce leaves or tortillas and make your yummy wrap!
