
Caramelized Onions
2 large red onion
2 TBS olive oil
2 TBS coconut sugar
2 TBS balsamic vinegar
pinch of celtic sea salt
1. Slice the onions long ways into thin strips
2. Heat the oil in a large frypan and add the pinch of sea salt
3. Spread the onions in the pan and cook over the lowest heat for 15-20 mins, stirring occasionally to prevent them from burning
4. Next is the caramelization process - when onions are soft and golden, add the sugar and balsamic and cook still on the low heat for a further 10 mins until they are sticky and caramelized. You may need to add a few TBS of water to prevent it from sticking and burning
5. Store in an airtight container in the fridge and use as required
* Make sure you don't turn the heat up, be patient otherwise the onions will burn!
