Banana Macadamia Coconut Bread

Any overripe bananas are great for making banana bread; the sweetness is a natural treat without all the added refined sugars. Bananas are one of those super fruits containing an array of health benefits, here's a great article detailing why they're so awesome. This bread is very easy to make. It's gluten-free, soft and moist, and it's a great healthy treat. Have it with somefig jam or even nut butter!

I try to have one banana a day, it packs an energy punch and helps sustain blood sugar levels so it's the perfect pre workout snack. High in potassium, it is officially recognized by the FDA as being able to lower blood pressure and maintain heart health. Bananas are also very good for bone health. They aid in digestion, acting as a prebiotic for good gut health and have antacid effects which protect against stomach ulcers. They contain high levels of tryptophan which is converted into serotonin, which helps combat depression as it's a 'happy mood' neurotransmitter. So why not have a banana and put a smile on your face!

Banana Macadamia
Coconut Bread



1 cup young coconut meat
3 ripe bananas
3/4 cup coconut flour
1/3 cup apple sauce
6 dates
1/2 tsp vanilla essence
1/2 tsp cinnamon
1 tsp baking soda
1/8 tsp celtic sea salt
3/4 cup macadamia nuts



1. Preheat oven to 160˚C

2. Mix all bread ingredient together except for the flour and macadamia on a med setting in a food processor or blender (I wanted the bread to be a bit 'grainy' so I chose a lower setting)

3. Add the coconut flour (note that this is denser than normal flour so you won't need as much of it when you're substituting) and mix until it reaches a dough-like consistency

4. Fold in the macadamia nuts

5. Put into the oven for about 40 mins

6. Leave to cool, then serve with jam or fresh bananas or whip up some coconut cream!

    I'm Binny, a full time Bikram Yoga teacher and studio owner that lives in Perth, Australia.

    I started this blog to share the things I love the best in the world: being healthy and happy, food (especially raw), yoga, traveling and most importantly, learning how to love and be true to myself.

    I suffered from severe digestive problems when I was younger, being gluten and lactose intolerant, and developed compartment syndrome and fibromyalgia in my teens. I have lived with constant pain for over 16 years now.

    Over the past 10 years, I've shifted to a mainly plant based diet and realised that being well and healthy is a way of life. I have been teaching Bikram yoga since 2011, in the US and Australia. Due to my health issues I've also had a lot of bodywork done as well as explored alternative therapies.

    I've become much more aware of myself as a result of all this - physically, mentally, spiritually and emotionally. Right now I love my life. In my career I love what I do and I do what I love. I have traveled to some amazing places around the world and made lifelong friends. In between working and traveling, I cook up a storm in the kitchen, especially raw  desserts, spend time with the people I love the best, which now includes a yoga husband, a mini yogini Estell, and our dog! I try to listen to my body the best I can.

    I truly believe that we all have the power and the capabilities to heal our own bodies, to nourish the spirit and seek our own happiness and life's purpose. This my journey...
