Apples are full of a fiber called pectin, giving it a unique quality of lowering blood fat, important in the prevention of heart disease. Regular intake of apples, which is roughly one a day, gives a high dose of antioxidants, supporting the cardiovascular system, regulating blood sugar and lowering the risks of many chronic heart disease. They also have anti-asthma benefits as well as anti-cancer benefits, reducing tooth decay, decrease risk of diabetes, helping with constipation and irritable bowel syndrome and boosting the immune system.
This simple and quick recipe is great for getting that healthy dosage of nutrients in as well as being perfect for the summer months coming up ahead. The pie has a lovely crunch to it with the sweet flavour of cinnamon added in. Sometimes I'll make up mini cup versions which is great for parties and snacks!
15 Mins Raw Spiced Apple Pie Base 1 cup pecans (soaked 6hrs) 1 cup walnuts (soaked overnight) 6 medijool dates 1 tsp all spice 1 tsp vanilla essence 1/8 tsp celtic sea salt Filling 4 big apples I used fuji apple) 5 medijool dates 1/4 cup sultanas (raisins) 1 TBS lemon juice 1 tsp cinnamon pinch of celtic sea salt 1. Combine all ingredients for the base and process until mixed well, I put it onto a lower setting as I didn't want it completely smooth 2. Line a pie dish and pat down well, if the mixture sticks to the spoon, dip the spoon in water 3. Take 2 apples and blend with the rest of the filling ingredients until mixed in 4. Put the other two apples in and turn to a lower setting so that you still have chunks of apple 5. Fill the pie dish and sit in the fridge for about 10 mins |
